We live to make the best possible, long fermented; nutrient dense sourdough and pastries.

 Sourdough Bread 

Our bread is all sourdough, all slow fermented to make them easy to digest and use organic or sustainable Wholegrain Milling flour, water and salt. Ranging from classic country, sandwich loaf, ciabatta, to our 100% rye.

 Viennoiseries 

Our long fermented pastries are laminated with Pepe Says cultured butter for extra oomph, using sustainable Wholegrain Milling flour, Big Little Dairy milk and featuring local fruit in season.

Savoury

We've curated the best locally sourced ingredients. As a result you'll find in our warm cabinet a 300g Sausage Roll, Smoked Ham & Two Cheese Croissant, a Bacon & Egg Breakfast Danish or a vegetarian, equally delicious, options too! 

About Our Coffs Harbour Bakery

We don’t see P&W as solely 'our business', but as an opportunity to encourage real change (as small as that might be) around us. We are doing this because we care about creating & nurturing our community.

 

We care about minimising the impact our business has on the environment. We care about the ingredients that we select and who we source them from. We believe that if we support other local; like-minded businesses, our humble small operations will have a greater impact.

 

It’s as simple as putting our money where our mouth is. We want to build relationships by putting our trust and value in locals around the Coffs Coast, and in return locals trust us to make the best possible, long fermented; nutrient dense baked goods.

We do things a bit different 

We are truly committed to run our humble local Coffs Harbour bakery business with a conscious. We've had long chats, deep thoughts, more chats...and some more chats about how we were going to do so by setting up challenging, yet attainable goals.

 

Being mostly takeaway, we've decided to focus on our packaging. We've learnt that not all "bio" or "green" cups where made the same, and some needed very special conditions to decompose. So after weeks of research, we've found two suppliers that tick all of our boxes and we can proudly say that we'll be using home compostable coffee cups.

 

However cool these cups actually are, what we really want is to encourage you to bring your own reusables. So when you ask Will to make your cuppa in your favourite mug that you've brought from home, or give him your (big) tub to be filled with baked goods, we will be thrilled, because you would have joined our cause and will be helping us keep our carbon footprint low, so to acknowledge that your coffee and your goodies will be cheaper too!

We are a humble family bakery that's growing and have big dreams when it comes to sourdough and viennoiseries.

We are a pretty awesome team of 5 bakers + moi (lady on the pic). We are all committed to the cause of producing baked goods to the best of our skills using premium, seasonal ingredients. No shortcuts. No gimmicks. Only da good stuff

- our shop and production space is just across the road from the beach. We experience changes in temperature, high winds and humidity. So we need someone who knows how to handle natural fermented doughs and can make judgment calls when it comes down to tweaking recipes.
- someone who is a natural leader. Knows how to communicate, manage, train, support and grow our team.
- someone who shares our ethos and values.
- someone who has a curious mind and has a natural instinct to come up with flavour combinations.
